Iced Drinks and Desserts
On the occasion of Veggie Oasis, please try these interesting, yummy and refreshing iced drinks and desserts.
Red Strawberry, Cherry and Pineapple Smoothie
Ingredients: banana, 5 strawberries, 2 slices of fresh pineapple, 5 pitted cherries, 100 ml freshly squeezed orange juice, ten ice cubes
Preparation: Throw the sliced bananas, pineapple, orange juice, cherries and ice cubes in a blender. Mix all the ingredients for 20 seconds and decorate your glass with mint leaves or fresh strawberries.
Pineapple and Banana Smoothie
Ingredients: 2 cups of fresh pineapple cut into cubes, a banana, 1/2 cup coconut milk, 1/2 cup vanilla ice cream
Preparation: Throw the the chopped pineapple, banana, coconut milk and ice cream in a blender and mix for 20 seconds. Throw in a few cubes of ice for a refreshing feel.
Watermelon and Vanilla Smoothie
Ingredients: 2 cups of watermelon cut into cubes, a cup of raspberries, 2 scoops of vegan vanilla ice cream
Preparation: Put the cubes of watermelon and raspberries in a blender and mix for 20 seconds until the mixture gets thick. Add a scoop of vanilla ice cream and mix for another 20 seconds. When done, place the smoothie in a fridge and add a few cubes of ice.
Mango and Carrot Smoothie
Ingredients: 2 cups of mango chopped into cubes, a cup of carrot juice, a cup of orange juice, 1/4 cup of fresh mint leaves
Preparation: Place the cubes of mango in a blender and mix for 20 seconds. Add freshly made carrot and orange juice and add the mint leave. Mix for another 20-odd seconds. Refrigerate.
Banana Oat Flakes
Ingredients: 1 banana, 250 ml of oat milk, 1 tablespoon of crushed oat flakes, 2 tablespoons of lemon juice, 1 vanilla sugar
Preparation: Peel a banana, cut into slices and place in blender. Add oat milk, oatmeal and vanilla sugar and blend well. When your drink becomes frothy, add the lemon juice. Refrigerate.
Orange and Banana Drink
Ingredients: 3 oranges, 1 banana, 1 tablespoon lemon juice, 1 teaspoon of sugar, cinnamon
Preparation: Squeeze oranges. Peel a banana, add lemon juice and mix in blender. Add a teaspoon of sugar, orange juice and a pinch of cinnamon. Mix well, refrigerate and serve.
Refreshing Wild Fruit Drink
Ingredients: 150 g strawberries, 150 g blueberries, 100 g raspberries, 600 ml of cold soy milk
Preparation: Cut the tops off strawberries and place them under running water together with the blueberries and raspberries. Take the washed fruit and milk and mix them in a blender. Serve chilled. If the fruit is acidic, add sugar or agave syrup.
Strawberries and Banana Smoothie
Ingredients: banana, a cup of strawberries, a cup of soy milk, cinnamon
Preparation: In a multi-purpose mixer or blender put the strawberries, banana, milk and cinnamon and mix until the mixture becomes smooth. For a less thick smoothie recipe omit the banana. Refrigerate before serving.
Avocado and Banana Ice Cream
Ingredients: 1 avocado, 1 banana, orange juice, 1 teaspoon of ground carob
Preparation: Mix all the ingredients and freeze.
Blueberry Ice Cream
Ingredients: 1 cup of cashew nuts, 1 banana, 2-3 apricots, 3 tablespoons of agave syrup, vanilla sugar, a dash of rice milk, 1 cup blueberries, 2 ml of water
Preparation: Place all the ingredients in the order prescribed above and mix in blender until you get a smooth cream. Put in a plastic container and freeze.
Apple Ice Cream
Ingredients: 2 apples, 1 tablespoon of chopped walnuts, 1 tablespoon of agave syrup, some lemon juice
Preparation: Grate the apples then blend until you get porridge-like mixture. Mix with other ingredients and put in the freezer.
Green Tea Ice Cream
Ingredients: 1 cup soy milk, 4 bags of green tea, 5 tablespoons of sugar, 340 g of tofu, 2 kiwis (peeled and cut into slices), 1 cup soy, oat or rice cooking cream, chocolate sprinkles for garnish
Preparation: Place the milk and tea bags in a medium sized bowl. When the mix boils, stir frequently while it cooks for another 5 minutes. Refrigerate for at least 20 minutes but no more than an hour. Gently squeeze the tea bags. Mix the milk with the green tea, sugar, tofu and kiwi until the mixture becomes smooth, about 2-3 minutes. Freeze for 5-6 hours (covered). Before freezing, you may opt to put whipped cream on top. Decorate with chocolate sprinkles before serving.
Ingredients: 2.5 cups of ripe peaches, 1 cup water, 1 cup brown sugar, 1 cup white wine, 3 tablespoons of lemon juice, 1 teaspoon of grated orange peel
Preparation: Stir the sugar into boiling water. Mix the peach and lemon juice into a puree and add the diluted sugar. Pour in the wine and orange zest. Mix all, chill and serve.
Foamy Fruit Cream
Ingredients: 1 cup semolina, 4 cups pineapple or apple juice, 2 teaspoons vanilla sugar, 3.5 cups strawberries
Preparation: Cook the semolina in fruit juice (about 15 minutes). Pour into pan and add the fruit and vanilla sugar. Blend well (about 10 minutes) and place in refrigerator to set.
Strawberry, Blueberry and Banana Ice Cream
Ingredients: 250 g strawberries, 100 g of blueberries, 3 bananas, 2 vanilla sugars, 150 ml of soy milk, for decoration - almond flakes
Preparation: Wash the strawberries and blueberries, and cut the bananas into slices. Add vanilla sugar and chop all with an electric food processor. Add the soy milk to the mixture and stir until all blends into one mixture. Pour the mixture in a bowl and freeze for 4-5 hours. Grab ice cream or a spoon to form balls, sprinkle it with almonds and serve slices. Grab an ice cream scoop or spoon to form a ball, sprinkle with almond flakes and serve. Before forming the ice cream ball, soak the ice cream scoop or spoon in warm water.
Lemon and Mint Ice Cream
Ingredients: 300 ml of sweetened soy cream, 1 tablespoon chopped mint, 60 g sugar, 2 vanilla sugars, 2 teaspoons grated lemon peel, 60 ml lemon juice, 400 ml of soy cooking cream
Preparation: Whisk the soy cream, but not completely. Add mint, powdered sugar, vanilla sugar, lemon zest and lemon juice. Mix all gently, then throw the soy coking cream in the mix. Pour into shallow container and leave in the freezer overnight. Serve the Ice cream with a fruit topping of your choice.
Chocolate Ice Cream
Ingredients: 100 g dark chocolate, dark chocolate with orange, 2 vanilla sugars, cinnamon, 75 g of fresh tofu, about 3 oz of soy milk, nuts
Preparation: Melt on low heat, with a little soy milk, 100g of dark cooking chocolate and two rows of dark orange chocolate. Add cinnamon and vanilla sugar, blend with tofu and a few chopped nuts, add about 2 oz of soy milk and stir. Sprinkle with chopped hazelnuts and chocolate sprinkles and freeze.
